Why do they say Everest is the tallest mountain, when it isn't?

Mt. Everest stretches 8850 meters above sea level, but it has a head start due to the general uplift from the Himalayas. The Hawaiian volcano Mauna Kea is 10,314 meters from stem to stern. Old school math tells me that Everest is 1,164 meters shorter.
